Hello, my name is Lauren Gordon, and I am a cookie-holic.
It is fairly simple: I. Love. Cookies. Not enjoy, not desire, not even adore… I love them. It all goes back to the Christmas’ of my youth. My mother is an accomplished baker. The woman would make a carmel apple cake that was fought over at elementary school bake sales (swear to Jesus) and come Christmas time, teachers would literally interrupt classes to ask me when the cookie tray was coming. You see, my mother did not just bake chocolate chip, oatmeal and sugar cookies. Oh no there were pitzels, chocolate pitzels, Noel Nut Balls, Rum Balls, Spritz, biscotti, Angeletti cookies, magic cookie bars, and more by the dozens. We all loved them so much, that she would hide them throughout the house so we all wouldn’t eat them before Christmas day. My cookie addiction began at the age I was old enough to chew them. I never had a chance.
I am using this to explain my total diet failure today. At one of my jobs we sell these big, shewy, toast-able chocolate chip cookies that conviently sit right at the register. In a last minute do it without thinking gesture I snagged one and added it to my once healthy(ish) meal, I warmed it, I dunked it, I could have died happy.
However 480 calorie cookies (oh yes, these bad boys are loaded with fatty deliciousness) are not going to help me ditch the pounds. So once again I called upon the super natural forces of the internet to come to my aid.
While it was hard to find a cookie that is “healthy” allrecipes.com whipped up a few that sound drool worthy to me. My particular potential fave: Brownie Oat Cookies
Ingredients
- 2/3 cup all-purpose flour
- 2/3 cup white sugar
- 1 cup quick cooking oats
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 egg whites
- 1/3 cup light corn syrup
- 1 teaspoon vanilla extract
Directions
- Spray cookie sheet with non-stick spray. Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, mix the flour, sugar, oats, cocoa powder, baking powder, and salt. Mix in the egg whites, syrup, and vanilla. Drop by spoonfuls on the prepared cookie sheet.
- Bake 10 minutes in the preheated oven.
